Anzac Biscuits

Ingredients

1/2 cup Canola oil

2 Tablespoons hot water

1 Teaspoon Baking Soda

2 Tablespoons Molasses

1 Cup old fashioned oats

1 Cup all purpose flour

1 Cup light brown sugar

1 Cup sweetened Shredded coconut

Method

  1. Preheat the oven to 350 Fahrenheit. Line 2 baking sheets with parchment paper and set aside.
  2. In a large bowl, mix together, oil, hot water, baking soda and molasses.
  3. In a second bowl, mix together oats, flour, sugar and coconut. Add the mixture to wet ingredients mix and combine.
  4. From a dough into 1 inch balls, place on prepared baking sheets.  Lightly press down on each biscuit with the palm of your hand.
  5. Bake for 15 minutes
